Why are these scrambled eggs exceptionally healthy? Because of the two basic ingredient.

  • Cottage Cheese: Rich in casein protein, which digests slowly, providing a sustained release of amino acids.
  • Eggs: A complete protein source that provides essential amino acids, supporting muscle repair and growth.

What to do with Cottage Cheese

I’m an absolute fan of cottage cheese and have been all my life. Cottage cheese is used often in Eastern European recipes, and since my grandmother and mom were full Croatian (immigrating to America at the turn of the 20th century), I grew up with cottage cheese. 

So many things can be done with it including making one of THE MOST divine cheesecakes ever! If you’ve never made my Croatian Cheesecake, well get ready to taste something rustic, chic (I know an oxymoron) and exquisitely delicious!

High Protein Scrambled Eggs

Yield: Feeds 1 to 2

Ingredients

  • 2 Tbl. extra virgin olive oil
  • 3 pasture raised eggs
  • 1 cup cottage cheese, 4% small curd, whole milk
  • Salt, to taste
  • 1/2 cup freshly grated pecorino romano cheese
  • 1/2 cup fresh herbs chopped, basil, flat parsley, chives, loosely packed
  • Sirracha or Chalulah Hot Sauce

Instructions

  1. Heat a small to medium non-stick skillet on medium heat. Add the olive oil.
  2. Mix together the eggs, cottage cheese, grated cheese, and herbs.
  3. Pour into the skillet. Reduce heat to medium low. Slowly blend and scramble the eggs.
  4. Turn off heat when the eggs are still creamy and moist.
  5. Serve with a drizzle of hot sauce, optional.
  6. Eat immediately!
