If you want to make these individual souffles, then why not grease your ramekins and pour in the batter. The baking time will need to be adjusted because of the smaller sizes, but that’s about all.

High Protein Omelet Souffle
Ingredients
- 1 Tbl. butter, salted
- 3 pasture raised eggs, large
- 1 cup cottage cheese, 4% milkfat, small curd
- Salt to taste
Instructions
- Preheat oven to 375
- Grease the pan well. Add 1 tablespoon of butter to the pan and melt it.
- In a small mixing bowl, whisk the eggs. Add the cottage cheese and salt and blend in well with a whisk or spoon.
- Pour into the greased pan.
- Bake in a preheated 375 oven about 30-35 minutes or until the top is crackled and there's little or no jiggle in the middlemost part of the pan.
- Remove. Let it rest a couple of minutes. Serve immediately.
Notes
Leftover omelet souffle can be refrigerated or frozen (for about a month).
