Easy Chicken Soup Bowl

Yield: Serves: 3

Ingredients

  • 1 can (13.5 oz.) UNsweetened coconut milk, organic
  • 1 box (16 oz.) Kettle and Fire chicken bone broth
  • 2 tsp. turmeric
  • 2 tsp. onion powder
  • 1 tsp. pepper
  • 1 tsp. salt
  • 3 garlic cloves, thinly sliced
  • 2 cups carrots, diagonally sliced wide slices
  • 3 Tbl. freshly grated ginger
  • 1 1/2 lb.s chicken thighs, bone in, skin on
  • 3 thin lemon slices
  • 8 oz. fresh baby spinach

Instructions

  1. Preheat oven to 400
  2. Put the spices in a small bowl and mix together.
  3. In a baking casserole dish, add the coconut milk, bone broth, spice mixture, blend, then put the chicken in and top with the lemon slices.
  4. Cover and bake in a preheated 400 oven for 28 to 32 minutes. Chicken should be 165 internal temperature. Check with a digital thermometer.
  5. Remove casserole from oven. Remove the lid and add the spinach. Replace the lid and let it spinach wilt for about 5 to 7 minutes. Remove lid and use tongs to toss in wilted spinach into broth. Serve immediately.
