What I love about this recipe is that it’s super easy. You have no idea how the magic works with just these three ingredients.

And, easy recipes are the best. These take no time at all to make. I use crunchy and smooth peanut butter. Sometimes I combine brands if I have a little in a few jars, which happens often.

Yes, you can go for crunchy peanut butter for these cookies. I love the extra nuts in every bite.

With just eggs, peanut butter and sugar, you create a thick and pliable batter that is then rolled into balls. 

How to Make 3 Ingredient Peanut Butter Cookies

One mixing bowl. And, everything goes in together. There’s really not much skill to this recipe. But you do want to use your elbow grease and mix the ingredients well. Then I roll into the desired ball size I want. I think larger balls work better than smaller ones. You take a nice three pronged for and make those classic criss crosses and slightly flatten the cookie before baking.

You can add chocolate chips to this recipe, but then it’s going to be four ingredients. Yeah, big deal. And, speaking of chocolate chips, I’d definitely use the mini chips in this recipe.

Keto Peanut Butter Cookies

If  you want to make this recipe ‘keto’ then simply substitute one cup of granulated sweetener. For example, you could use monk fruit sweetener. It’s all your choice!

3-ingredient peanut butter cookies

Yield: About 2+ dozen

Ingredients

  • Preheat oven to 350
  • 2 ½ cup peanut butter
  • 1 ½ cups sugar
  • 2 eggs
  • Sea salt Crystals
  • OPTIONAL:
  • 1 tsp. vanilla
  • 1 cup coconut, shredded, sweetened

Instructions

  1. In a large mixing bowl, combine the peanut butter, sugar and eggs. (If using vanilla and coconut, add that in, too) Blend for several minutes until you have a thick somewhat crumbly mixture.
  2. Put parchment paper on a cookie sheet.
  3. Take about 2-3 tablespoons of the peanut butter mixture and roll into a ball. Place on the cookie sheet. Continue until all batter is rolled.
  4. Take a fork and make a criss cross pattern smashing down somewhat the ball of dough.
    Sprinkle several sea salt crystals on top.
  5. Bake in a preheated 350 for 16 to 18 minutes. Remove and cool completely.

Notes

Use your favorite peanut butter.

I haven't tried this recipe with other types of nut butter.

You can mix peanut butter types, nutty, creamy, chia seed peanut butter and regular peanut butter, etc.

I used a combination of organic peanut butter and regular crunchy peanut butter (i.e., Skippy, Peter Pan, etc.)

  3. Are the cookies crunchy or soft?

    1. Hi, Dotti! These are crunchy on the edges/rim of the cookies and soft inside. I did make them large (12 cookies w/the recipe). They were a little thicker thereby giving the soft inside. xoxx ally
