It’s light and delicate and goes with almost anything. Sparkling peach Bellini’s is an ideal brunch drink, but it’s just as delicious served at a dinner party as a light drink guest can enjoy with appetizers or finger foods.

I have so many recipes with peach such as southern cinnamon peach pie. How about in, sour cream peach cobbler! I’m telling you, crazy good!

Yield: 1 serving

Peach Bellini is a classic wine cocktail. It requires sparkling wine or champagne with fresh peaches and sweetener for sweet cocktail lovers.

Ingredients

• 3 oz. Dole Fresh Frozen Peach Slices, partially thawed
• ¾ oz. peach schnapps
• 4 oz. champagne
• 1 oz. fresh sour
• ½ oz. grenadine syrup
• ½ oz. simple syrup
• ¾ cup ice cubes

Instructions

Combine all ingredients into a blender. Cover and blend until smooth, Pour into a chilled glass.

Garnish with frozen peach slice.

Notes

You can make this a virgin drink by substituting ginger ale for the champagne.

Add some frozen pomegranate arils or whole fresh frozen cranberries as 'ice cubes'.

Top off with a sprig of fresh mint.

Cut a partially thawed peach slice into bite size pieces and skewer three chunks on a toothpick for garnish. Lay across the top of the glass.
